03 - Heat remaining 1 tablespoon olive oil in a large skillet over medium-high. Add chicken and cook for 5 to 6 minutes, stirring occasionally, until browned and fully cooked. Transfer cooked chicken to a plate and set aside.
04 - In the same skillet, add all sliced bell peppers and the red onion. Cook for 5 to 7 minutes, stirring frequently, until vegetables are softened and slightly charred. Add minced garlic and sauté for 1 minute.
