# Ingredient List:

→ Bread

01 - 4 slices white or sourdough bread

→ Cheese

02 - 4 slices cheddar cheese or preferred melting cheese

→ Spread

03 - 2½ tablespoons mayonnaise

→ Optional Additions

04 - 2 teaspoons Dijon mustard

# Directions:

01 - Arrange bread slices on a clean surface.
02 - Spread a thin, even layer of mayonnaise on one side of each bread slice.
03 - If using, spread a thin layer of Dijon mustard on the opposite side of two bread slices.
04 - Place two slices of cheese between two bread slices with mayonnaise-coated sides facing outward; repeat for second sandwich.
05 - Heat a nonstick skillet over medium-low heat.
06 - Place sandwiches mayo-side down in skillet and cook 3 to 4 minutes until golden brown.
07 - Flip sandwiches and cook for an additional 3 to 4 minutes, pressing gently with spatula, until bread is golden and cheese has melted.
08 - Remove from skillet, let rest for 1 minute, then slice and serve immediately.

# Expert Tips:

01 -
  • The mayonnaise creates an unbeatable golden crunch that butter simply can not achieve
  • You probably have everything you need right now in your refrigerator
  • It turns a simple sandwich into something that feels like a diner treat
02 -
  • Medium low heat is your friend, because high heat burns the bread before the cheese melts
  • The mayonnaise layer should be thin but visible, thick enough to coat but not gloppy
  • Letting the sandwiches rest for that one minute prevents the cheese from exploding out when you cut them
03 -
  • Use a spatula to press gently but do not smash the sandwich into the pan
  • If the cheese is not melting but the bread is done, tent the pan with foil for a minute
  • A well seasoned cast iron skillet works even better than nonstick if you have one
