# Directions:

01 - Preheat the oven to 350°F. Lightly grease a 9-inch baking dish.
02 - In a large bowl, toss together peaches, granulated sugar, cornstarch, grated ginger, lemon juice, and vanilla extract until evenly coated. Spread the mixture evenly into the prepared baking dish.
03 - In a separate bowl, whisk flour, brown sugar, ground ginger, cinnamon, and salt. Add the cold butter cubes and work them into the mixture using a pastry cutter or fingertips until it forms soft, coarse crumbs.
04 - Evenly sprinkle the crumble topping over the fruit filling. Bake for 35 minutes, or until the topping is golden and the filling bubbles around the edges.
