# Directions:
01 - Preheat oven to 350°F and lightly grease a 12-cup muffin tin or line with paper liners.
02 - In a small bowl, combine 2 tablespoons ground flaxseed and 5 tablespoons water. Stir well and allow to sit for 5 minutes until thickened.
03 - In a large mixing bowl, combine rolled oats, ground cinnamon, baking powder, and salt.
04 - In a separate bowl, whisk together almond milk, maple syrup, melted coconut oil, vanilla extract, and the prepared flax egg until well combined.
05 - Pour wet ingredients into the dry ingredient mixture and stir until fully incorporated.
06 - Gently fold diced apples and optional walnuts or raisins into the batter.
07 - Divide the mixture evenly among the 12 muffin cups, pressing down gently to compact the mixture.
08 - Bake for 25 to 28 minutes until firm and golden on top.
09 - Allow oatmeal cups to cool in the pan for 10 minutes before removing. Serve warm or at room temperature.
