12 - 2 tablespoons fresh cilantro, chopped
13 - Juice of 1 lime

# Directions:

01 - Preheat a grill or grill pan over medium-high heat to prepare for cooking.
02 - In a bowl, combine olive oil, lime juice, cumin, smoked paprika, salt, and black pepper. Add chicken breasts and coat evenly.
03 - Grill chicken breasts for 6 to 7 minutes per side until thoroughly cooked and juices run clear. Remove from heat and let rest for 5 minutes before slicing thinly.
04 - While chicken cooks, mix diced mango, red bell pepper, red onion, jalapeño if using, cilantro, lime juice, and a pinch of salt in a medium bowl. Toss gently to combine.
